I guess it shouldn't be so surprising that Jinbe might know about Nika. Neptune knew about joyboy and Jinbe had close ties to the mermaid royal family so he likely knows about Nika/joyboy's fruit as well. Whoswho kind of painted it as clear as day why Jinbe was so quick to join an upstart like Luffy. Because Ace was always so quick to gush about Luffy, Jinbe would be able to tell that Luffy ate Nika's fruit just by listening to Ace talk about his brother while they were locked up together.
